Il Cascinalenuovo Restaurant, Isola d'Asti
2011/2012/2013
Tradition and innovation are wisely deployed as the basis of a gastronomic offering which skilfully combines the great Piedmontese cuisine with aromas and flavours coming from all corners of the world.

Michelin Guide review: (2013) Although this restaurant‘s elegant, simply furnished dining room may not be typical of the formal Piedmont style, its cuisine has its roots firmly in the region. It offers a range of the best traditional local cuisine and also features fish dishes on the menu.

Parizzi Restaurant, Parma
2011/2012
My cooking has changed together with me. I have learnt the basic elements of the classic cooking; I have searched for the most innovative techniques, with a particular attention for ingredients, bought from the best supplier; I made my cooking lighter to find again the sense of taste; I made it elaborate then simplified it, dressed it and undressed it. (…)

Michelin Guide review: Parizzi serves high quality cuisine that encompasses traditional favourites from Parma, as well as more innovative dishes. These are served in a contemporary, minimalist-style setting. As an added bonus, the restaurant also offers a few rooms and apartments for guests.

Restaurant St. Hubertus at the Hotel & Spa Rosa Alpina, San Cassiano, Badia

2011/2012
The Restaurant St. Hubertus, whose name stands for the patron of the hunters, was opened in 1996. At that time, only a small part of the then-pizzeria was transformed into a tiny restaurant with Norbert Niederkofler as head chef. In 2000 the efforts were honoured with the first Michelin star. (…)

Michelin Guide review: This restaurant has reached vertiginous heights - and we're not talking about the surrounding Dolomites! Norbert Niederkofler's cuisine is a superb mix of precise, technical know-how and delicious Italian flavours. The delightful dining room and excellent service also deserve a special mention. A real highlight of the Alta Badia area.

Il Rigoletto Ristorante, Reggiolo

CLOSED
2011
love to move beyond the regionality of a product, to create new associations, even if - at first sight - they may seem rash”. The cuisine of Gianni d’Amato is a passionate and creative way of revisiting the numerous specialties of Reggio Emilia - just a few kilometres away - and of giving free rein to tasty fantasies: ravioli stuffed with pumpkin, pork cheek in a Lambrusco sauce, crème brûlée served with a splash of balsamic vinegar, of course the traditional balsamic vinegar from Reggio Emilia… A “journey” in the true sense of the word to the heart of a private 18th century residence, brimming with character.

Ristorante Da Caino, Manciano

2011/2012
It was 1971 when Angela and Carisio, known as Caino, opened a wine resale where it was possible nibbling salami, cheeses and some cold dishes. Since then they have gone a long way and today this restaurant can be listed among the best in Italy, famous at home and abroad.

Michelin Guide review: A scenic, culinary journey in the heart of the Maremma: this small restaurant is a gem thanks to the attention to detail and tasteful interior. The food is Tuscan with a penchant for meat, and Valeria‘s extraordinary talent enhances flavours. This wine bar offers regional wines, as well as three pleasant rooms.

Gener Neuv Ristorante, Asti

2011/2012/2013
The restaurant, which dates back to the early part of this century, was originally a traditional trattoria run by "Gener", the typical fisherman of the village.

The Fassi family (with Piero Fassi in the dining rooms, his wife Pina and daughters Maria Luisa and Maura in the kitchen) took over in 1971 and completely refurbished the restaurant in keeping with the originai style.

The various rooms of the restaurant, which were furnished by Antonio Guarene, have become the perfect place to discover the pleasures of everyday life while enjoying the prestige of a long-established tradition.

Gener Neuv is one of Italy's most famous restaurants and a favourite meeting place for international celebrities and artists.

Michelin Guide review: (2013) Offering an elegance that never goes out of fashion, this restaurant has been in operation for over 40 years and is a standard bearer for old Piedmont. The delicious regional cuisine will make you want to return here time and time again.

Le Soste Guide
During the many years now the Le Soste Guide, through the selfassertion of its restaurants has been trying to give credit to the signs of time, to the changes of the world after the certainly revolutionary epoch of nouvelle cuisine that it was with more or less emphasis proposing or sometimes suffering. In a life of increasing globalization, the influences on high quality cooking necessarily open to the world, might come from any source and arrive from Spain as well as Japan, from new raw materials as well as from innovative relation styles, from culture and science. And it is exactly from science that arrived and will continue arriving emerging opportunities or “ingredients” ending up in various forms on the tables of our houses and sometimes on those of the haute cuisine. Science as for its own constitutional rules never stops and does not tell us in advance the roads it will attempt. It involves food in very many ways and even became almost carrier of its own cooking rapidly defined and known as “molecular”, because in the very little it preserves the properties of the very big and thus allows for the rather simple use of various types of additives of different kind in the proposed dishes. In reality science comes into restaurants in various ways starting from those typical of new technologies to end with those intrinsic in the raw materials (think about genetics) but obviously it also interests and deals with the cooking and preservation techniques (think about the fridges and the blast chillers), not to mention the possibility to improve the food, making it more appetizing to the taste, the sight and the sense of touch.
